I've eaten in loads of them; here are my comments for the ones I know.
Britannia Spice
Indian restaurant which claims to be more authentic than most and offers food from different specific regions (also does a limited range of Thai). This was hailed as one of the best Indian restaurants in Edinburgh but I found it a bit disappointing; nothing memorable.
Cafe St Honore
Lovely French food, great for a special occasion although there are other, more "characterful" restaurants in town.

Cosmo Restaurant
Eaten here once, not that impressed
Creelers Restaurant
Good fish, yes, but I'd always go to Leith to eat seafood.
Daniels Bistro
My favourite "local" restaurant in Edinburgh - I eat here every month or so and it is consistently great comforting food. It specializes in Alsace and Savoie food, lots of hearty solid French fare, fab cold meats and cheeses, good fish soup, great puddings. Lovely and extremely good value for money.
Doric Tavern
Great, great pub, not so impressed by the food - the menu sounds extremely impressive but the food fails to deliver.
Duck's Restaurant
Haven't been for years; I remember the food as being pretty good, but there are restaurants I'd rather go to...
Hendersons Salad Table
Veggie, wholemeal salady stuff. Popular with students.
Iggs
If I remember correctly, this does tapas at lunchtime, and more traditional upmarket Scottish food in the evenings. Very, very good food at night - one of the best in Edinburgh and definitely worth checking out.
Skippers Bistro
One of many fish/seafood restaurants in Leith. They all serve really very good food, beautifully cooked, so I guess it's a matter of personal preference. Fishers and the Waterfront (see below) would be my favourites, but Skippers is certainly worth trying too.
The Shore
Small, cosy bar area (you can eat here) with separate (more upmarket) restaurant room. Very, very good seafood. Slightly less posh than Waterfront, but they're both in Leith and both serving top-quality fresh seafood, so not a huge amount to choose between them, although I'd go for the Waterfront, I think (slightly nicer place; food slightly more consistent)
Waterfront Wine Bar & Bistro
Gorgeous pub/seafood restaurant. Lovely even for a drink, even better for food; does a fabulous Sunday brunch/lunch. Quite pricey, but you're paying for fresh seafood cooked to perfection in lovely surroundings that manage to be relaxed and chic at the same time. The crème brûlée is the best I've ever eaten. One of my favourites.
Whighams Wine Cellars
Lovely place - basement bar/restaurant with lots of little alcoves, subdued lighting etc. Fabulous to drink wine in; the food is seafood-based and really quite nice, but I don't think the place works as a restaurant as well as a bar; I'd rather go here for a bottle of wine then go somewhere else for dinner - a shame, as the food is undeniably good.
Hope this helps!

Sorry, forgot to add that The Witchery is wonderful and well worth the money (even just for the surroundings; it's so beautiful). It has probably the best wine list of any restaurant I've been to and the service is faultless. haven't yet been to Rhubarb although it's on my list of must-go-to places for this year and it's had pretty good reviews.
Sorry, but I hated all of sexysatanchick's recommendations! Find Oloroso vastly over-rated, Kublai Khan I didn't like at all and Giuliano's is just standard pizza/pasta stuff. Different strokes, eh? I'm always wary of recommending places for just that reason....

Wow- thank you both so much!!
Different things for different people, what a thorough list of reviews hopefully this will help more than just me!
