How safe is sparring? In sports like kickboxing, jujitsu, etc. I mean in terms of brain damage (is there any?), broken noses,...

you will get brain damage from sparring because being hit in the head kills brain cells. pugilists dementia is the result of getting accumulated small amounts of damage from sparring sessions, fights, etc.
and of course your nose can get broken. most fighters have had broken noses.
Sparring is basically a toned down version of a competitive contest.
the potential for injury {cuts, bruises, broken bones etc} is there.
However, im assuming your asking this as you are contemplating taking part in sparring sessions. Id say go for it. Any respectable trainer & sparring partner will build you up gradually in terms of spar duration, contact intensity etc.
Search the forum for other threads about sparring, its a question asked every other day on here.
You should only really spar after suffiecient time practicing techniques etc used in the sport!
I broke my nose my first time sparring 3 weeks into any kind of fighting training lol but I got my shots in really didn't hurt that bad plus I have broken my nose like 4 other times just growing up. Point is yes you will get hurt because no matter how toned down sparring is once you rock the other guy they are coming at you hard no matter what and vice versa at least in my minimal experience.

The harder you spar, the better you get. If you train 70%, you'll end up fighting 70%.
I haven't been injured yet other than cuts and bruises and an accidental high inner thigh kick (wear your cup and all time guys), but then again I've been getting personal training and I've only had actual sparring partners for the past month.
However, in my time in Judo, I've encountered a few tough guys come in and retard around when we're active on the ground. I'm working in my guard and he's cranking my arms like water pumps.
Just make sure your sparring partners aren't idiots.
